Yes, I admit that Netflix’s favorite influencer recently influenced me to make a round of these bubbly cocktails for a recent gathering with girlfriends. But a classic kir royale genuinely is just so lovely and refreshing to sip on a warm day. And with just two main ingredients, it couldn’t be easier to make.

If you happen to be new to the kir royale, this classic French cocktail is traditionally made by topping crème de cassis (a sweet blackcurrant liqueur) with sparkling white wine (such as Champagne). It is a sophisticated, bubbly, vibrant red cocktail that takes literally less than a minute to prepare, making this a great option for easy entertaining. And if you feel like adding a garnish, fresh berries or a lemon twist are always beautiful additions.

It’s that time of year when nothing sounds better than a big green salad loaded up with fresh and flavorful ingredients. And lately, this orange salmon salad has burst onto the scene as a new favorite here in our house. ♡

It’s made with the perfect balance of sweet and savory, tangy and creamy, crisp and juicy ingredients I absolutely love in a big entrée salad. The pan-seared salmon is quick and easy to cook while you prep the rest of the salad ingredients. And the gingery hot honey vinaigrette pairs perfectly with the citrus and adds an irresistible touch of heat that will definitely have you going back for more. I can’t say enough good things about this one!

That said, if salmon isn’t your thing, this salad would also be delicious made with shrimp, chicken, steak, crispy tofu, or any other protein that you might prefer. We’ve also loved adding fresh navel oranges or mandarins to the salad lately while they’re still in season, but I definitely look forward to trying this salad with some peaches, mango, or pineapple come summertime.

Sesame Ginger Roasted Cauliflower Soup

This sesame ginger roasted cauliflower soup recipe is easy to make with simple, delicious, feel-good ingredients.

I know that spring is just a few days away, but I couldn’t resist sneaking in at least one more soup recipe for the season.

Say hello to this cozy, creamy, cauliflower soup. ♡

I generally tend to go the lemony or Italian-herb route when seasoning roasted cauliflower soup. But recently, I decided to try adding in some fresh ginger and scallions that I happened to have on hand, along with plenty of garlic and a drizzle of toasted sesame oil. And the results far exceeded my expectations. We absolutely loved this soup!

It’s naturally gluten-free, vegan, and made with an entire head of cauliflower, which roasts up to caramelized perfection in the oven and then blends into a wonderfully silky purée. I also added in a hint of coconut milk to make the soup extra creamy, whose flavor paired surprisingly well with the ginger and sesame, but you’re welcome to use cream or milk if you prefer. And I definitely recommend topping the soup with some chopped scallions or chives for texture, or some croutons sprinkled on top could be fun too.

Cranberry Orange Almond Energy Bites

This cranberry orange almond energy bites recipe is easy to make and perfect for healthy breakfasts and snacks!

It’s pretty much a sure thing that I’m going to love cranberry-orange anything, but I have to say that these little energy bites are especially delightful. ♡

They’re loaded up with some of my favorite feel-good energy bite ingredients, including almonds, oats, flax, shredded coconut, dates, dried cranberries, and fresh orange juice/zest. And they’re quick and easy to make in the food processor by just blitzing all of the ingredients together. Feel free to roll them in a bit of extra coconut or just serve them plain — both options are delicious!

We love having these energy bites on hand for healthy snacking or an easy grab-and-go breakfast. All of these ingredients also happen to be naturally gluten-free and vegan. And they keep well in the fridge or freezer, so I highly recommend making a double batch while you’re at it.

This lemony tortellini soup recipe is easy to make in about 30 minutes with whatever flavor of tortellini you love best.

My toddler is currently obsessed with tortellini, so we’ve been eating a record amount of it lately. And in my efforts to come up with different ways to serve it (and add some extra veggies in there!), this simple lemony soup has turned into a new family favorite. ♡

It’s nothing revolutionary — just a simple soup with veggies, tortellini, and spinach. But the addition of chopped fennel, lemon, fresh dill and a hint of crushed red pepper flakes give the broth such lovely extra layers of flavor and freshness. It’s the perfect soup for this time of year that’s nice and cozy, yet still tastes light and lemony as we head into spring. And best of all, everything can come together in less than 30 minutes!

Feel free to use whatever flavor of tortellini you love best here. And while we generally keep this soup vegetarian here in our house, it would also be absolutely delicious with some Italian sausage or chicken added in too. My toddler would just recommend serving it with plenty of extra Parmesan on top. As he loves to say in his adorable little voice, “more cheese please!”

It’s naturally gluten-free and easily can be made vegan by skipping the cheese. It would be delicious with chicken, steak, shrimp or chorizo if you feel like adding a protein. And while this recipe would be delicious served as a side salad, we happily make a meal out of it here in our house and always enjoy every last bite.
