Kielbasa and Cabbage Noodles

These hearty sausage and cabbage noodles are quick and easy to make and bursting with rich savory flavors.

Every winter, I find myself craving some version of sausage and cabbage. But these noodles may be my favorite recipe yet! ♡

We’re going unapologetically BIG on savory flavors here, beginning with a rich sauté of smoky bacon and garlicky kielbasa. Then we’ll add in a huge pile of chopped green cabbage and cook it down until tender. Then everything everything gets tossed together with chewy egg noodles in a simple tomato-paprika sauce until each bite is evenly coated and bursting with flavor. It’s total comfort food and truly couldn’t be more delicious!

The recipe comes together quickly (especially if you chop as you go) and is easily adaptable with whatever type of sausage and noodles you love best. Feel free to also add in any other leftover veggies you have on hand that might sound good. And while I love the paprika and caraway included in the recipe below, you could also play around and take the seasonings in a Cajun or Italian direction instead if you prefer. There are lots of fun ways to customize this one.

Pumpkin Wild Rice Soup

I’ve loaded this one up with seasonal veggies, chewy wild rice, protein-packed chickpeas, and vibrant chopped kale — all simmered together in a creamy pumpkin-sage broth — and it couldn’t be more cozy and delicious. The mix of savory, slightly-sweet, creamy and earthy flavors works so well here. And it’s one of those soups that’s wonderfully hearty without being too heavy. My favorite!

We’re definitely partial to the vegetarian/vegan version of this soup here in our house, but you’re more than welcome to add some bacon, sausage or shredded chicken if you’d like to mix in some additional protein. And while I really love the slightly-sweet flavor that coconut milk adds to the broth, feel free to just add in a splash of heavy cream if coconut isn’t your thing. This recipe is endlessly flexible, so don’t hesitate to play around with the seasonings or add-ins.

Everyone needs an excellent zucchini bread recipe in their repertoire. So if you happen to need one, I highly recommend giving my favorite zucchini bread a try! ♡

I’ve come to love this recipe over the years because it’s mercifully low-fuss. There’s zero zucchini-wringing required — just add the grated zucchini straight into the batter, which yields a perfectly light and moist loaf of bread. Then all of the remaining ingredients you’ll need are pantry staples that you likely already have on hand. I love using lots of vanilla and warming spices in my zucchini bread as well as a hint of lemon zest, which magically makes all of the flavors here “pop.” And then a generous sprinkle of coarse sugar on top of the bread bakes up to form a crunchy sugar topping that is downright irresistible.

I tend to be a zucchini bread purist and love mine without any add-ins. But I’ve included options below if you’d like to add in some chocolate chips, nuts, dried fruit, coconut, or anything else that sounds good. This recipe is wonderfully flexible and foolproof. So the next time you have a zucchini surplus, grab your bread pan and let’s bake up a quick loaf of homemade zucchini bread together!

Mint Pea Hummus

This mint pea hummus recipe is easy to make in 10 minutes and perfectly balanced with sweet and savory flavors.

This summer, we spent a month back in Barcelona catching up with friends, soaking up the Spanish sunshine, walking everywhere and reveling in good public transport, and of course, hitting up all of our old favorite markets and restaurants. But I have to say that one of the random foods I was most happy to see again was the hummus con guisantes con menta — mint pea hummus — from my favorite grocery store. ♡

This lovely green hummus used to be a weekly (at least!) purchase for us back when we were living there. The mint and peas add a refreshing hint of sweetness and fresh aromatic flavor to the hummus. And when perfectly balanced with the rich sesame flavor of tahini, hearty chickpeas, a tangy squeeze of lemon juice, garlic and cumin, this hummus is just so delightful. We most often just served ours with pita or crackers and veggie sticks for dipping, but it also tastes wonderful in sandwiches, grain bowls, burgers, wraps, you name it. As a bonus, it was also a great way to get extra veggies into our toddler too!

Anyway, being back in Barcelona reminded us how much we missed having green hummus around. So I snapped a picture of the ingredient label while we were there and set about trying to recreate the recipe once we landed back in Kansas City. And I have to say, I’m very pleased with where this recipe landed!
