Vegan Brownies

This vegan brownies recipe is quick and easy to make with a handful of everyday ingredients. Simple, fudgy and so delicious!

I’ve been making and bringing these vegan brownies to gatherings for nearly a decade now. And my friends — vegans and non-vegans alike — always adore them!

I’ve honestly found myself returning to these brownies so often because it’s one of those back-pocket recipes that only takes about 30 minutes to whip up and calls for basic pantry ingredients that I almost always have on hand. Plus it also sneaks half of a fresh avocado into the batter, whose healthy fats stand in for part of the oil needed and whose flavor is (at least in my opinion) completely undetectable in these brownies. People are always surprised to learn that they’re eating avocado brownies and give them rave reviews!

The most important thing you need to know about these brownies is that they’re rich and very chocolate-y and fudgy. And they are downright heavenly when served warm out of the pan with a cool scoop of vanilla ice cream. If you’re into the salty-sweet thing, I also highly recommend a pinch of flaky sea salt on top. Yum.

Peach season around here this year has been the cutest. ♡

Our little guy, Teo, is currently 16-months-old and loving his first summer getting to sample all the ripe produce the season has to offer, but fresh peaches have definitely emerged as a new favorite. Teo has already learned where to look out for them at the market (and I’ve learned to look out for those tiny little hands darting from the stroller to try and nab them, ha!). And each time he bites into a fresh peach slice, he lets out the most adorable little squeal of delight. As a first-time toddler mama, I have to say, is there anything sweeter than watching fresh peach juice dribble down your baby’s chin?!

Needless to say, we’ve been bringing home a record amount of peaches lately. And since gazpacho is an absolute essential here in Spain during the summertime, we’ve been having fun blending the leftovers into quick batches of this cold soup to beat the heat. The sweetness of the peaches balances out the savory notes of classic tomato gazpacho just perfectly. And when seasoned with a hint of fresh basil and served up perfectly chilled, there’s nothing more refreshing on a hot summer’s day.

The great news about this peach gazpacho recipe is that it’s also incredibly quick and easy to blend up. It requires zero cooking or heating up the kitchen (very welcome during Europe’s current record-breaking heat wave). And as is the case with most gazpacho recipes, it tastes even better for leftovers the next day.

This cashew chicken broccoli recipe is here for you on busy weeknights when you need to get a healthy and delicious meal on the table in a snap! It’s made with a simple chicken and broccoli stir-fry, tossed with lots of toasted cashews, fresh garlic, ginger, and scallions. Cold Brew Tonic

This cold brew tonic recipe is easy to make and always so delicious and refreshing.

This seems to be the summer of cold brew tonics here in Europe. ♡

We’ve been seeing them featured on coffee shop menus everywhere we’ve traveled lately. And after sampling a few, I understand the draw — they’re so fizzy and refreshing!

The concept is just as it sounds — cold brew concentrate is served over ice, topped with bubbly tonic water, and garnished with a slice of lemon or orange. We’ve seen various versions made with espresso too, but I have to say that I definitely prefer the smoother, non-acidic flavor of cold brew in this drink. It pairs perfectly with the more bitter, botanical flavor of the tonic water (Fever Tree is my go-to). And when served ice cold with a squeeze of citrus on a hot summer day, this drink is downright delightful.

One Pot Farro with Italian Sausage and Tomatoes

I fully give all of the credit here to Smitten Kitchen, whose famous one pot farro with tomatoes is the brilliant base for this recipe and has been a family favorite in our kitchen for many years now. Over time, though, we’ve found ourselves gussying up this side dish to turn it into more of an entrĂ©e, adding in lots of zesty Italian sausage (either traditional or plant-based, both work!), a few handfuls of greens (either baby spinach or kale), extra flavor boosters (veggie stock and more fresh basil), and a sprinkling of toasted pine nuts (for buttery flavor and crunch). And especially this time of year when juicy cherry tomatoes are in peak season, we find ourselves craving this farro nonstop. It’s just the best!

It’s incredibly cozy and flavorful and hearty, without feeling too heavy. It’s wonderfully hands-off once you have browned the sausage, since the farro and tomatoes will simmer together until perfectly tender. It’s super-easy to customize with any of your other favorite add-ins (hello, extra veggies that are hanging out in the crisper drawer, maybe a can of beans for extra protein, or a drizzle of cream for an indulgent finish…you name it). And of course, who can complain about just one pot to wash?!

Easy Refrigerator Pickles

We’ve been making this refrigerator pickles recipe on repeat this summer, especially while ripe cucumbers are in season. And while I know that everyone has their own preferences when it comes to the perfect pickle, in my book, it doesn’t get any better than this simple recipe. Inspired by Grillo’s famous fresh pickles, these homemade pickles are perfectly crisp and crunchy, they’re loaded up with a fresh blend of garlicky-dill-bay seasonings, they are salty and vinegary but not overly so, and WOW are they delicious.

They are also amazingly quick and easy to make, requiring only about 5 minutes of prep time and at least a few hours to pickle. (Or if you have the patience, they’re even more delicious the next day.) They’re also naturally gluten-free and vegan. And while they are wonderful in burgers, sandwiches, salads, cocktails and more, here in our house we’re obsessed with just popping them plain as a quick snack. There’s nothing more satisfying in my book than that crisp cucumber crunch!
